Cheese is also made in Austria. The traditional Bergtilsiter earns its appellation "special" through the 100% hay milk from which the cheese is made. This cheese does not push its way into the front row, but gently and quietly takes its space. Balanced in aroma and taste, yet unique and with character.
The texture of the cut cheese is slightly crumbly and you can see small air pockets. After four months of ripening, the cheese develops not only "bang" but also a buttery or creamy bouquet. Particularly exciting is the range of flavours that one would not expect from the nose.
